Coconut rice pudding recipe?

My DS (5) announced this morning that he would like to try something with coconut milk in it. No idea where the request came from, but this is hugely exciting for me as I posted a thread yesterday moaning about what a fussy eater he is so the fact that he's asked to try something new had me dancing around the kitchen!

However, he doesn't like curries, so I was thinking maybe a rice pudding made with coconut milk? He does like rice pudding so this seems to me to be a safe-ish option...something he likes but varied slightly. Does anyone have a recipe? Is it just the same as standard rice pudding but with coconut milk? Or is it part coconut milk part normal milk?

If you want to just replace the standard milk with coconut milk, then it would be fone. but ime it is better to use the 'light' coconut milk as it has a better consistency. I use it to makecustard sometimes, too. Coconut crème caramel is one of the best things I ever made Smile

This is a gorgeous no-added-sugar chocolate mousse recipe using coconut milk & dates
There is a very subtle coconut taste to it but it's mostly chocolatey Grin

A month ago I made coconut icecream. The children loved it!
Mix equal parts of condensed milk and coconut milk Freeze 45 minutes in covered tin. Take out and beat mixture with fork. Mix in pieces of coconut (frozen available in Asian supermarkets). Put in suitable container and freeze. Enjoy!

How about marrow coconut custard?
Grate and cook some marrow with some sugar and in its own juices with a couple of crushed small cardamom pods.
Drain out any excess liquid. Mix coconut milk with sugar and two eggs. Mix in cooked marrow.
Bake in buttered dish as you would any custard. Scrumptious!

Cook sticky rice or tapioca pudding. Serve with fruit, coconut milk and syrup made with jaggery or dark brown palm sugar.
You can also serve noodles or cooked sweet potato with coconut milk and jaggery or dark brown palm sugar syrup.
