How do I make delicious fried mushrooms on toast?

Chestnut mushrooms are the best ones for fried mushrooms, I use lots of other sorts for different things, but always chestnuts for frying to put on toast, with a breakfast, etc..

Wild mushrooms and real butter. Honestly. Find a wet field and pick your own! grin
Not the red ones with white spots though as my dad kindly handed me recently as a "joke"

Don't wash the mushrooms, if dirty just wipe with damp kitchen roll. Yes to a little salted butter and keep going till they are small and dark.

Ooh yummy! Soy sounds good. I couldn't get any interesting mushrooms at waitrose today- just chestnut and normal close cap mushrooms. I'm going to try the soy and pepper tomorrow.

High heat for a lot longer than you think... mushrooms need to cook off their water until they sort of 'squeak' in the pan... They will get soggy to begin with, but keep going and they'll firm up as the liquid evaporates. Also try black pepper and soy sauce instead of salt for seasoning... It does something amazing to mushrooms smile

Butter, high heat, lots of seasoning smile

The mushroom mix at Carluccios is button, shiitake & oyster if that helps with added parsley at the end.

With mushrooms they tend to let out their water first and then you need to keep cooking on a high heat until the water evaporates, so the flavour intensifies and they start to go brown. I always use butter in everything but if you use a spreadable there is also water in there, so that will add to the sogginess.

I can do the toast grin
My mushrooms always look soggy and are quite tasteless. I've tried cooking them in olive oil or butter. I think I'm probably using the wrong mushrooms but also how am I cooking them wrongly?
I don't want garlic mushrooms just the delicious pile of mushrooms they serve at Carluccios or lovely tea shop breakfast <dribbles a bit>.

Can anyone help? smile
