When life gives you lemons, ask for tequila and salt wink But seriously, cut them up in wedges and freeze them; use them in drinks as 'ice and a slice' in one x

Ooh loads of ideas here for me to try! Shall send DH out to the trees tomorrow so I can start on some of them grin

Chopstheduck - thanks for the eggless lemon curd recipe. Lots I had found had a soy base, and we try to avoid that too.

I think our oranges are too bitter for juice, but marmalade might be an idea...

Might just banish everyone from the kitchen on Saturday & see how many different ways I can use them grin

Could you make Lemon cordial?

I cut lemons into eighths lengthways and freeze them. You can then add them frozen to cold drinks, plunge into boiling drinks, or add to anything needing lumps of lemon

Juice them and freeze in small portions. Margaritas. Sliced and frozen for drinks. Salad dressing. Lemon sorbet.

When life gives you lemons, make lemonade. Wonder if you can make a syrup from the rind and juice to dilute later. Perhaps that could be frozen?

We have a couple of lemon trees in our garden, and an orange tree too I think (rented place so still discovering things).

There's probably 30 lemons on the two trees right now ready to be used. I've already made lots of lemon chicken dishes, a few lemon drizzle cakes and am drinking hot water with lemon every morning. But we still have loads.

Any suggestions?
(With the complicating factor of no eggs or dairy. Due to allergies in the family I don't keep eggs in the house at all. Dairy is easier as I just substitute oat milk or margarine)

Thanks smile
