Share your favourite chili recipe

Here's mine:

1 pound minced or 1/2 inch cubed beef
1/2 pound minced or 1/2 inch cubed pork
1/2 pound streaky bacon
4 shallots
6 cloves garlic
2 peppers
chilli powder/flakes
fresh chillies
2.5 teaspoon cumin
2 teaspoon coriander
2 teaspoon oregano
2 teaspoon paprika
2 teaspoon cinnamon
2 teaspoon ground cloves
2 teaspoon all spice
2 teaspoon cayenne pepper
beef stock
juice of 1 lime
1 330ml bottle mexican lager
2 tablespoons instant coffee or 1 cup of brewed ground coffee
2 squares 90% dark chocolate or a tablespoon of cocoa powder
ground black pepper

O I like the idea of lager in a chilli- how fantastic! This vegetarian chocolate and black bean chilli is a winner in our house.

Mine is a veggie one involving green, red and puy lentils, chocolate, chipotle paste, coffee, lime, barbecue sauce (the JD one) and lager amongst other things. It's bloomin gorgeous.

Must be eaten with homemade guacamole (no tomatoes) and/or mango salsa, plus soured cream and grated cheese.

Bumping this thread cos a friend introduced me to chili con carne con queso.

Basically you make chile con queso and swirl it into chili con carne. Make sure you don't use tomato sauce in your chili con carne though else it will curdle. I also add half a jar of jalapenos to this recipe.
