Vegetarians ~ I need your help please

My vegetarian son is coming to stay soon, I'd like to make us some tasty interesting meals, so what are your favorite vegetarian dinner party type dishes?
I'm not fond of curry, though I don't mind Moroccan style spices, and he does not like nuts, but apart from that, anything goes. All ideas gratefully accepted.

Spanish chickpeas is lovely and easy. Fry onions, cubed carrots and garlic until softish. Add 2 cans of chickpeas, can chopped tomatoes, smoked paprika and simmer. 5 minutes before the end add half a bag of fresh spinach. Once it's wilted it's ready. Serve with crusty bread. Yum

Risotto is easy and you can use any veg in it.

I love Greek or Middle Eastern food - they all have loads of good veggie food- baked aubergines, veggie moussaka, stuffed peppers/tomatoes, feta cheese in a greek style salad, flatbreads, falaffels, halloumi, cous cous dishes, olives, lots of 'picky' things...yum.
Or Mexican- burritos/fajitas etc?
Italian- ravioli of some sort? Loads of lovely pasta/pizza/risotto dishes are veggie or can be adapted.
Or quiche? Roast pepper/goats cheese or broccoli/stilton work well.

Not posh, but homity pie is lovely. Loads of variations on line.

I suspect lentil dhal would take Moroccan seasoning. There are loads of couscous and bulgar wheat middle eastern salads with spices apricots and sultanas that make substantial additions to a veggi meal.

Unfortunately, my dinner party dish is mushroom nut roast.

Also google vegitarian burritos, a lot of Mexican stuff can be made with beans, rice, veg and cheese. Idiotic amounts if heat can be added with chilli sauce at the table (DH) leaving the rest pleasently flavoured for humans.

Wow! Thanks everyone, some wonderful ideas there ~ I hadn't even thought of Mexican, but I've got a bottle of Tequila lurking somewhere, so will put a Mexican night on my list.
I love meze or tapas style meals, as they leave plenty of time for gossip, so I'm feeling much more inspired now Smile

Yes, I agree that Mexican style is a winner. This chocolate and black bean chilli is great, served with lots of different things (rice, lettuce, cheese, sour cream etc) and then everyone can help themselves to make a wrap...

I also think that Moroccan style dishes are wonderful: what about a Butter bean, olive and cherry tomato stew served with cous cous

And lastly, something a bit leftfield: Jerk chickpeas

Happy vegetarian festing. I'm glad you are more inspired now...

Lots of lovely veggie Middle Eastern recipes here

beetroot risotto is yum too.

Spanish tapas dishes like patatas bravas is nice or Russian salad. Beans in olive oil. Nicoise salad without the tuna is also good.

Pea puree with mint, homemade hummus, koshary.
