How do you make your fajitas?

I normally buy the box that has the wraps and spice inside so just have to add the chicken and peppers.

Do you make your own fajita spice or cheat like me?

ClaimedByMe Fri 02-Aug-13 08:11:39

The box kits are my friend!

I buy the packets normally and make my own salsa (chopped toms, dried chilli flakes, lime juice, red onion if I have it, fresh coriander if I have it, seasoning) and guacamole (avocados, seasoning and lime juice) and buy wraps separately. Although tonight I'm trying out a recipe which is half a teaspoon each of ground coriander, cumin and paprika, a crushed garlic clove and 3tbsp fresh coriander. You toss the chicken in oil, then stir it through the spices to coat before frying.

I'm hoping it is one of those things that is almost as easy without a box!

Big box of fajita spice and just buy everything else separate so we can ave nicer wraps

BoundandRebound Fri 02-Aug-13 08:36:00

I have made my own spice mix before - but seriously, life is too short

I don't like the yellow box flavour so I use the Discovery seasoning and wholemeal wraps instead with a jar of salsa.

Aldi do a lovely box

sarahandemily Fri 02-Aug-13 08:42:46

I just make my own. Don't think it's particularly authentic but I like the flavour. Basically I just marinade the chicken for 5 to 10 mins in garlic, salt, lemon juice, oil and smoked paprika. Fry as normal then add the marinade at the end of the cooking. Then I just buy the other bits separately but you can make the salsa pretty easily like baby bouncer.

Never sure if this actually works out cheaper than buying the kits on offer though

FromageFrog Fri 02-Aug-13 08:42:58

Oh I'm off to Aldi in a minute, will pick up queenbay

I make up this mix I use it in everything vaguely Mexican and it's goooooooood. This is a great site actually, lots of ideas.

zgaze Fri 02-Aug-13 09:00:30

Also I make these instead of buying tortilla wraps, they're much nicer and only take a few minutes.

Life might be 'too short' to make up these things instead of buying them but I like controlling the amount of salt etc and knowing what goes into stuff and also am on an extremely tight food budget where every penny really does count so I'd rather spend ten minutes more making stuff and save a couple of quid.

I buy the Discovery fajita kit, a Mexican dip selection and jalapeno peppers. I'm vegetarian so usually just use onions, peppers, queen mince and a tin of tomatoes. Also make nice veggie fajitas with babycorn, green beans and tomatoes.
Not had them for ages, think that's what I'll be having for lunch today now!

JollyHolidayGiant Fri 02-Aug-13 09:03:51

We have a toddler so the spice only goes in the salsa. I make a tomatoey sauce throwing in lots of spices and the chicken/veg just gets cooked with garlic.

Before DS was weaned I would have made the salsa really spicy and just cooked the chicken with paprika and garlic.

We use the yellow box kits and I always buy them on offer when they're £2 or so, so it's nearly always cheaper than buying separate bits. I always make my own guacamole though, and use fat free fromage frais rather than sour cream.

PrincessKitKat Fri 02-Aug-13 09:14:26

We have the discovery packet seasoning and wholemeal wraps.

We also put refried beans in ours. Taste. Sensation.

Giraffeski Fri 02-Aug-13 09:20:50

We make our own, it's a mix of chilli powder, cumin, black pepper, salt, paprika, dried oregano, garlic powder, onion powder and chilli flakes.
I also make our own tortillas because of allergies to wheat, soy, egg and dairy and these are so easy to make its unreal!
I normally serve with homemade guacamole, sliced jalapeños and DD1 has grated cheddar on hers too. Salsa if I can be arsed to make it but I often forget TBH.

magimedi Fri 02-Aug-13 09:23:16

I marinade my chicken in lemon juice, drop of oil, cumin, coriander & mild chilli powder.

HoopHopes Fri 02-Aug-13 11:49:14

Girafffeski do you have your recipe for wraps as my ds has those allergies too and would be great to have home made wraps he can eat.

MERLYPUSS Fri 02-Aug-13 20:28:22

Cumin and corriander powder, garlic salt and smoked paprika in a bag and shake the meat (normally chicken) and veg. Griddle it with red onion, pepper and mushrooms. Splosh it with lemon/lime juice on the griddle once cooked. Serve in wraps with shredded iceberg, sour cream, tomatoes and grated cheese. Tin of refried beans and chilli sauce for the adults. yum,

StarsAboveYou Fri 02-Aug-13 20:32:57

We make our own spice mix, its a Gordon Ramsay recipe and uses only paprika, cumin and chilli powder. It's a ratio of 1:1:2 but I can't remember which one there is more of. <helpful>

We bulk buy the spices and then make a large jar of the spice mix which lasts approx 6 months and we probably have fajitas twice a month.

If I have the time or the energy I will make the salsa and guacamole too but usually we just buy them.

DipMeInChocolate Fri 02-Aug-13 20:36:02

I make my own spice mix: salt, pepper, paprika, chilli powder, cumin and cayenne pepper with chicken onion and peppers. Use own wraps and buy salsa. Use Mayo instead of sour cream.

peachypips Fri 02-Aug-13 20:36:16

Also would like that recipe Giraffe !!

Panzee Fri 02-Aug-13 20:39:44

I make my own after what seemed like a local boycott of fajita seasoning. And some of them are too BBQ-ey for my taste.

snowlie Fri 02-Aug-13 22:44:14

Make my own seasoning mix, salsa & guac - tortillas too if I have the energy, the shop bought ones are full of rubbish.
