I'm going to be looking after 4 under 4s for a few days next week - arrrgh - please tell me your super fast food recipes. I don't mean "you just chop an onion..." fast, I mean bung it in the microwave for 20 secs type thing Wink

My freezer is full of meat that I'm storing for a friend so I can't freeze in advance.

Any ideas? Healthy convenience food?

Nothing wrong with scrambled egg/omelettes with cheese/ham/mushrooms.
Baked beans on toast?
Pizza doesn't have to be evil.
Salad with quiche/cold meats or something?
Pasta & pesto?

You could make a bolognese ahead - it would keep very well in the fridge.
Or a casserole.
Or lasagne.
They improve with ageing.

Pasta on to cook (sauce will be done when you've done the pasta so quick as can be)
Stick ready cubed pancetta in frying pan until crispy, stir in tub Creme fraiche and grated cheese, stir until it forms a sauce
Serve

Toasted sandwiches/wraps?

Fish fingers, eggy bread, beans on toast. Carpet picnic - cheese, crackers, grapes, yogurt. Heck, if you get the weather it could even be a picnic-picnic! Grin

Crispy triangles - tortillas, sprinkle with grated cheese, half and dry fry. Add some veggies, eg thinly sliced peppers if liked.

Prep vegetables in advance and keep them in the fridge.

Stir fry is quick and can be as healthy as you want it to be.
Sandwiches/open sandwiches - can be as simple and easy as you want.
Salads - make them with beans/lentils/meat or make a salade nicoise.
This is quick and easy too: Smoky paprika salmon with avocado, tomato & jalapeño salad
Couscous is also quick - you can make a couscous salad or have it with meat and vegetables.
This is nice too, and you can add/take out the things you like/don't like: Spring spaghetti

I haven't tried this, but it looks quite nice: Prawn & cucumber salad

I would pre prep some whizzed onions, carrot and celery and keep in the fridge too.
Put pasta/rice on to boil. Fry a large handful of said veg with a carton of passata. Add 1/2 tub basics philly/creme fresh. Crumble tin of tuna on top but dont mix it so it turns to mush. (I used sardines last week and it was yummy). You can add garlic/herbs/puree etc if you want. It does taste like you've spent time on it.
