anyone make their own sushi?

I agree, Temaki are good for lunch boxes. I've been living in Tokyo for a while now- most japanese mums will also make onigiri (rice balls). It's very easy - take any mould, put cling film over it. Spoon in cooled japanese sticky rice, add any filling (tuna mayo, salmon etc) add more rice. Fold over cling film and take out of mould. You can keep it in the cling film until ready to eat. Wrap dried seaweed sheets when just about to eat otherwise they become soggy and tasteless. Be careful of uncooked mirin, it's sweet alcohol.

You need to fan the rice while stirring through the mirin mixture to make it suitably glossy.

When doing inside out rolls put cling film on your bamboo mat to stop the rice sticking.

Keep your hands damp while handling the rice - again to stop sticking.

Ocado sells all the stuff like sushi mats and mirin.

DH makes it and I'm sure he had 4yo DC1 helping him the last time he did so. He uses much wasabi for my tastes but that's how he likes it.

I have a set of nice knives i keep sharp so that's not a problem.....finding seaweed on asda online is though confused think I'll have to have a look for an oriental food shop to take dd to

To cut the rolls dampen the knife blade a little. Slice through like a dream. But my knife's pretty sharp anyway. I heard that it doesn't have to be if you dampen it. I keep a tea towel handy to wipe off and dampen.

I made it with a class of 30 10-11 year olds successfully.

I made the rice using pudding rice with lemon juice squeezed in to make it glossy.

Simple tuna mayo filling with cucumber or red pepper was easy.

Just buy the sheets of seaweed in the supermarket.

I did have a mat though, but at a pinch a clean tea towel could do.

Just make sure you cut the roll with a very sharp knife so that you keep the shape.

haha, I think she already takes the ponciest luches going.....most of the kids seem to take crisps/choc every day while I pack pastas and wraps and exotic fruits.

Youtube. Easiest one is temaki - those enormous cone-shaped rolls. Kids can do that.
And you don't need a mat.

We use a mat to make the rolls, but generally I do that, not the kids. We also bought some sushi mould like these. DS2 can use those.

Recipes: sushi without mat!

And can either help me out with a couple of simple recipes to try out with dd1 (that are small person friendly) or recommend a book I could have a look for?
