whole salmon serve with skin on or off ????

just cooked one for a party for someone else and not sure whether to sreve with the skin on or off.What do you think ?

what about head and tail? some off the meat looks dark too would that be minging?

skin off. take head and tail off if you don't like the look of it. Cover a serving platter or oval plate with shredded iceberg lettuce with a ring of sliced cucumber around the edge. Salmon in middle, sprinkle chopped dill on the fish.
