I have made them with spinach very easy. You have to put the spinach leaves in boiling water till soft not soggy, on a cutting board remove most of the stem that is hard then roll the mince with spinach folding in the sides pack in a pot and cover with a mix of seasoned tomato paste and water.
Use large spinach leaves works best.
