chicken portions

any ideas? has anybody got any differant ideas for a change from roast chicken for a 3 and 10 year old thanks

Crush up a bag of plain crisps - can be the ones with no added salt - with some margarine/butter and some crushed garlic. Cover the chicken portions with the crisp mixture and bake in the oven - middle temparature, about 30 mins or so depending on size of chicken portions. May need to cover the chicken portions with foil towards the end. This tastes nice!

Mix a little apricot jam with some hot water to make it a little more runny and coat chicken pieces with the mix - roast or grill as usual - gives a yummy crunchy skin and the chicken and apricot is a great mix - serve with salad or veg or whatever - great picnic idea too.

Nigella's suggestion (untested by me!):
4 chicken legs / portions
100ml apple juice
100ml natural yoghurt
1 tablespoon honey
1 tablespoon soy sauce
1 clove garlic, minced

Marinate chicken portions in the mixture, then arrange on a rack over a roasting tin and cook at gas mark 6 / 200C for 35-40 mins, then gas mark 3 / 160C for another 20-25 mins. You can freeze the portions in their marinade and take them out to cook later.

what about honey garlic and soy, mixall together then marinade for a bit. Cut slashes in the flesh.
