Storing and reheating cooked veg

I read somewhere that the lady roasted loads of veg at one time and kept the extra in fridge so it was quicker to prepare meals with them the rest of the week.

My question is, how long do you think you could safely store cooked veg? (peppers, courgettes, butternut squash, potatoes, etc)

cooked veg keeps for about a week in the fridge ime. You will see/smell when it has gone beyond edibility.
