Chop a red pepper, fry off with a bit of garlic and chilli (optional). Add a can of chopped tomatoes. Add a pint of stock (always chicken for me, I don't like veg stock). Simmer for 20 minutes. Blitz with stick blender.
You can chuck in extra bits, potatoes, onion, cream at the end if you like.
