I've organised a church function and think we should do a vegetarian dish?

In fact I'm certain of it as a lot of people like it (including me) and a lot are vegetarian.

Does anyone have a fairly easy to moderately easy dish, preferably one pot, that is tasty and that I can make to feed say 20?

I'm doing a meat dish too, plus salad and bread. But I want the vegetarian dish to be really nice as they're sidelined a lot of the time.

Macaroni cheese (esp if there are to be children there!)

Or Pasta Puttanesco (sp?) - I'm sure that's tomatoes and capers and herbs and veggie ....

I'd go for a chilli, stew or curry. They normally smell so nice that meat eaters want to dig in too. What about this Blackbean and Chocolate Chilli? It is mild and very tasty. We served it in wraps so it could work well for a social event.
Otherwise, what about a moroccan style dish? They normally go down well because they are flavoursome but also easy to make. I have this Carrot and Chickpea stew recipe

If you're going to make a chilli, they're best made with either lentils or quorn mince, you can add loads of veg to bulk it out, I fry onions, carrots, mushrooms, peppers (added to the pan in that order), add quorn mince, a couple of tins of toms, a tin of kidney beans, then a lovely stock with marmite and tomato puree, chilli powder, and anything else you have in your cupboard. Even yummier next day.

asda's own veggie mince is better value but not as tasty (IMO)

Whatever you do I would try and have some protein in it. It drives me crazy when the vegi option is just, well veggies, with no protein not a balanced meal imo!

lentils are protein aren't they? And with wholemeal bread buns that's balanced.

Or other pulses?

I'd say beans and lentils are protein
But given the arguments I'm having on other threads where as far as I'm concerned plain common sense has left the building, I don't know anything any more

Chickpea are really easy. One tin serves about three people, so you could get away with 6-7 tins which only cost 3 for £1.

I use this recipe and it goes down a treat. I had taken it to the school summer fayre and it sold out in seconds! Good luck and don't panic, it will be great x


I haven't seen those threads? I just know there won't be any quorn being eaten on my watch! bleurghhhhhh

multitastmama that looks lush, bookmarked it. Do you think I could use passatta instead of blended tomatoes? Same thing surely? I love chickpeas in any form.

A spring minestrone that's closer to a stew than a soup? So all the greens you can get (my veg box had masses this week and they're not normally lavish - spinach, kale, white flowering broccoli) in a light broth with pasta and some hard cheese to sprinkle over. (which makes it vegan-friendly too)
