I've organised a church function and think we should do a vegetarian dish?

In fact I'm certain of it as a lot of people like it (including me) and a lot are vegetarian.

Does anyone have a fairly easy to moderately easy dish, preferably one pot, that is tasty and that I can make to feed say 20?

I'm doing a meat dish too, plus salad and bread. But I want the vegetarian dish to be really nice as they're sidelined a lot of the time.

I like veggie chilli with kidney beans and lots if different coloured peppers- it's one of my favourite big pot dishes and you can even do meat chilli to match which is nice.

Aubergine and tomato casserole.

Layers of fried aubergine and tinned chopped tomatoes, add a few herbs and salt and pepper, top with yoghurt and breadcrumbs (yofu works too).

Just bake for 20 mins.

Peppers (halved) stuffed with cooked rice and chopped mushrooms, you can add cheese and they are the only food I genuinely believe taste better in a microwave.

There are many delicious veggie curries. I love sweet potato curry but you can't overcook it or it disintegrates.

Cubes of paneer cheese, a few tins of chopped toms, chick peas, and a jar of mild curry sauce mix. It works really well with a tika masala or tomato based curry. Serve with a bowl of creme-fraiche on the side so people can dollop a spoon on top. Great with salad and bread.

Thanks everyone great ideas. No Stealth I won't be using aubergine don't worry wink Also probably not spicy as they can be fussy buggers and don't want it all leaving. Plus I'm trying to raise cash for the church so cheaper the better. Think the chickpea and paprika idea may work thanks? I

With most veggie stew/chilli/curry dishes, they taste better if you make them the day before so it will be a bonus.

Veggie curry has mass appeal. (Unlike aubergine wink sad )

Spinage and feta tart is a good suggestion.

Also onion and feta tart. (Yum yum )

Mild veggi chilli, suitable for vegans and DCs is what we do for school.

It's lovely too, I'm not a veggi, but I'm not into hot chilli and pinch a ladle full of this one.

Make extra, horse meat fuss may mean people are cagey about cheap mince.

The meat option is going to be a broth I think? It goes down well and I'm not in charge of that bit, just homemade bread and the veggie option.

Veggie curry may be the best idea? I could make a load of chappatis too they're easy and cheap. Or a mexican veggie chilli and put out tortilla chips and suchlike?

Sadly no, it was made by a Mum Who's vanished. My DDs have gone to one secondary and hers to another.

I think you just need lots of veg, onions, carrots, spuds, peppers, courgette, tinned tomatoes, kidney beans, a bit of chilli or chilli sauce (often easier to get right), and I'd add a veggi stock cube rather than salt and lots of pepper.

The Rose Harissa Tunisian stew from Nigella's Feast, she serves it with meatballs but more often that not I just serve it with the veg. Recipe is here. It's not too spicy if you follow the recipe - I normally put a load more harissa in and it's not too spicy. You can get the rose harissa from Sainsburys. It is really lovely and with pomegranate and coriander on top looks lovely.

Yes rutabaga is swede grin

It is really good - easy to cook and so delicious.

You could serve it with flatbreads or something.
