Just that really! Dug out my mixer etc at the weekend. Quite fancy baking once a week and would love some nice recipes, especially fruity / tangy / vaguely healthy cupcakes. Any tried and tested favourites?
just use the same amount of butter creamed with sugar (ie 8 ounces or 6 ounces or 4 ounces) add half the number of eggs (so 8 ounces = 4 eggs) then the same number of ounces of flour. Flavour as wished (I like lemon juice) then bake and ice if wished. You can shove raisins, chopped up apricots etc in them, or even grated carrot, nuts and seeds.
