Flipping green peppers! Do you have any good recipes?

We eat loads of peppers raw, but not the green ones, so end up with a glut of them. Any ideas for non-fiddly recipes to use them up? I hate to waste food. Ta.

Chachouka is lovely with green peppers, more savoury. Tbh the recipe there is more complicated than it needs to be - once you've made the tomato-ey sauce (which you can freeze/make in advance etc) just make holes in it, crack in the required amount of eggs (normal chicken eggs fine) and put a lid on and carry on cooking on the hob. They will be done in about 3 mins or so.

Green peppers also fab in a curry.

Fahitas

To be honest, anything spicy really, I think they work better!

There was a pepper and chorizo lasagne in last months good good magazine that was delightful! I'll see if I can find the recipe to limk

I use them in soup, grill them and stuff them.

Ta Annunziata - that was a funny thread. Shows me I should search before I post too Smile. No I know I am not alone in disliking the things!

I think strongly favoured recipes are the way to go, so thanks Pottering and spiltthetea Smile

Stuffed peppers of course! Cut tops off, scoop out seeds and ribs, fill with seasoned mince or beans with or without rice or quinoa, top with cheese, bake. Lots of recipes online.

Or....make a stir fry, chop and add to chilli, use it to top a pizza, sauté with onions for fajitas...

They make me vomit when they are raw Envy

Microwave them.

They are the only food that taste better microwaved.

Also shove them in stew.

Grill them split and rubbed with Harissa until skin side blackens a bit, put in knotted and olive oil, serve with lump of grilled halloumi, squeeze of lemon on warm Turkish bread rubbed with olive oil.

Sorry posted too soon..Grill them split and rubbed with Harissa until skin side blackens a bit, put in knotted plastic bag for ten min then rip open bag and peel off skin, and olive oil, serve with lump of grilled halloumi, squeeze of lemon on warm Turkish bread rubbed with olive oil.

Also nice left in mix of olive oil garlic and pinch sea sadly for a few days after grilling, then shredded and serve with pasta ribbons, anchovies, Parmesan and buttered courgettes.
