I defrosted a couple of chicken breasts on Wednesday they have been in the fridge since- do you think they will be safe to use today?

I wouldn't.

Sniff them. If you are even slightly unsure then don't.

Why didn't you cook them earlier in the week?

It's just been an incredibly manic week with work and poorly kids and life getting in the way- will give them a sniff and if I'm in doubt I will chuck, shame

I'd use them if they look and smell ok.

I wouldn't, don't they normally say use with 24hrs once defrosted?

So long as they're cooked so that the internal temperature of the chicken breast (basically the coldest bit) gets above 140C for several minutes, that will kill the bacteria. Basically, cook the ever-loving heck out of it. Undercooked chicken would be a problem, but the high temperatures will destroy any bacteria.

I would & have on numerous occasions - if they smell ok & are cooked thoroughly then they'll be fine.
