Two veggie guests for Easter lunch

I'm having some very dear friends over for lunch tomorrow. One adult and one child are veggie, everyone else real meat lovers. I'm doing roast lamb with all the trimmings but would like to do a nice veggie option rather than my usual stuffed mushroom or nut roast.

Inspiration please!

Veggie tart always a nice option and so easy to make. Puff pastry, tomato puree, veggies of your choice and cheese topping.

Good idea, but I'm not the best pastry cook! Could get some frozen I guess.

Yes buy the pastry, tomato base, veggies and a bit of goats cheese. Top with turned basil leaves.

I was going to suggest the same - slow roasted veg (pepper, onions, garlic, etc) roasted with the herbs you're using for the lamb (e.g., rosemary). I'd def by frozen pastry, it's pretty good. I only ever make pastry these days if I want to do something special - e.g., cheesy pastry.

If do a veggie loaf. Basically, pick any ingredients from;


Breadcrumbs, fried onion, mushrooms, any lentils/beans, oats, nuts, spinach, courgette

Add herbs, egg or cheese to bind it and a spoonful of marmite.

Squash it into a tin or dish and bake.

Basically it's a bit like stuffing, but any combination will work.

(Blue cheese mushroom and spinach works well. As does cheddar, oats and nuts, Or lentils and courgette )

Just do any combination. And as long as it feels like a stiff cake mix it should hold together.

Spinach and mushroom lasagne. Absolutely delicious. My lasagne of choice, and I'm not vegetarian.

Fry mushrooms and onions. Add spinach and nutmeg/ seasoning.
Mix together crushed feta and cottage cheese.
Layer of veg, lasagne, layer of cheese, lasagne, layer of veg, lasagne, top with white sauce/ emmentaal
Bake!

It's delicious and will go with the trimmings for the lamb.

Just realised you want to avoid loaves... Why not make the same mixes but slightly looser, then wrap in pre made pastry and slice diagonally across the top for a veggie Wellington?

I'd do a roast pumpkin, onion, feta and pine nut tart with Waitrose butter puff pastry.
