Meatloaf

Have made this for the first time today, is in the oven. Is this something you make? What would you have with it? I'm thinking mash and green beans. I got some of those gravy pot things so me and dh will have that with it but its too salty for the baby obviously, couldn't think of a way to make home made gravy without salt, unless anyone has any ideas?

I have it with potatoes an veg as I would other meat.

I also have it cold sliced on to sandwiches

I serve it with quince jelly, cumberland sauce or a good dollop of ketchup...

I do a homemade tomato and onion sauce and have it with jacket spuds. Its lovely cold, with salad or in lunchboxes.

It was lovely - we had it with the mash and green beans, really enjoyed it. Would have had the leftovers for tea today but went out for a curry for lunch so need no tea at all!

Will have leftovers tomorrow.

Where did you get the recipe from Crunchy,I luffs a meatloaf.

It was sort of loosely based on this Martha Stewart one but i used beef mince and Dijon mustard and I put in dried thyme, rosemary and some ground cumin.

So
750g beef steak mince
3 slices bread, crumbed,
1 medium onion
A generous squirt of garlic purée
Tsp each dried rosemary, thyme and ground cumin
Heaped tsp Dijon
3 tbsp(ish) of ketchup
Pepper
2 eggs
1 grated carrot
1 stick of celery

I put the onion, celery and garlic in the food processor and whiz zed them up then mixed with the rest of the ingredients then put it in a silicone loaf tin and baked it for about an hour. Dead easy! I didn't put any salt in because we have a 9 1/2 month old and I figured ketchup has salt anyway but you might want to add some salt.

I made nigella's one and she recommended a BBQ gravy, as follows:

50g muscovado sugar
125ml beef stock
4 tbsp each of Dijon mustard, soy sauce, tomato purée
1 tbsp red wine vinegar

Heat and stir until combined. It was lovely and I guess you could use low salt stock an leave out the soy, if worried about salt.

And YY to cold meatloaf sandwiches. With pickles.

Thanks Fred, I'm trying to find somewhere that stocks the kallo low salt beef stock cubes, only seen them online so far. The baby just ate it without gravy and we had the salty gravy pot stuff which was ok I suppose, prefer homemade though!

Crunchy - try your local health food shop if you have one. Ours only had the low salt veggie ones in but when I mentioned that they make beef and chicken ones as well they offered to order them for me if I agreed to take half a tray of each. We use them all the time so I said yes straightaway.

Thanks sparkle, yeah I've seen the veggie ones in holland and Barrett and another independent health food place but not the beef ones, Ill ask next time I'm in. Storage is a bit of a problem for us which puts me off buying them off amazon where it seems to be similarly large quantities they offer.
