What to do with left over toast potatoes?

I freeze them to use in the week for a quick roast dinner for the DC during the week.

What ever you do do not add them to soup! I quite often make what I call 'scrap soup' which is usually onions, any older odd carrots or other veg & cooked veg leftovers. Has always been fine until the time I added left over roasties - really weird taste of roast dinner that soup had!

Bubble 'n squeak with a fried egg on top.

Or fry up with bacon/pancetta, garlic, caraway seeds and savoy cabbage. You could swap the caraway seeds for walnuts. A dollop of brown sauce won't go amiss.

Steam some kale, then fry with pots, garlic. Add walnut sized sausage-meat balls with chopped up prunes. Little bit of apple sauce maybe?

Patatos bravos with chorizo in a garlic and tomato sauce.

Eat them cold, on their own (but dip in salt first).

Slice and fry in butter til golden and have with fried eggs. Mmm, dippy yolk and crispy potatoes!

I don't mind them cold dipped in mayonnaise. Indians do a roast potato curry that is lovely.

bubble and squeak is left over cabbage fried with left over potato, a rarity to have left overs in this house, but it is delicious, particularly with a fried egg
