Meal plans for this week-GO! <lacking ideas for midweek!>

Sun- spaghetti Bol ( from the freezer-I usually make a bucket full every month)
Mon- chicken kievs with salad and baked pots
Tues- sweet chilli crust salmon with new pots and salad
Weds- pad Thai chicken ( sachet thing)with noodles
Thurs- slow cooked gammon in coke with roast pots and veg
Fri- pizza with garlic bread
Sat takeaway

I hate cooking with a passion so spend as little time in the kitchen as possible!

I don't think that's a shit day's food. Lots of veg and yogurt etc.

We will have:

potatoes dauph with smoked mackerel and green beans
baked pots with chilli from freezer
omelettes and salad and olive bread
slow cooker gammon with lentil thing and broccoli
broccoli and stilton soup
something from the freezer

don't know days, it dpeends on which veg need eaten first!

We don't have an oven, so are slightly limited in what we eat. We also normally eat out twice a week.

This week's plan is:
Sun - chicken stirfry
Mon - cabbage spaghetti & meatballs
Tues - lamb steaks, sweet potato mash, veg
Weds - Greek style burgers and salad
Thurs - chicken & salad

I think we eat a little too much red meat, but it's a massive pain trying to wean DP off it!

Today- Irish stew (MN recipe, was going to be Moroccan lamb but I thought I'd honour the occasion)
M - home made pizza
T - Something made by DP therefore pasta
W - tuna fishcakes
Th - shepherds pie
Fr- chicken and chorizo jambalaya

Well we are only having the chicken pie that was planned for Thursday today. Last Sunday's lamb was HUGE so became a shepherds pie midweek which meant we didn't make the pie till today. I also had a load of left over Curry which i frozw which we will have for tea tomorrow. All in all am very pleased with how many meals I managed to stretch to.

Sun - Indian ready meal
Mon - Sausage pasta (red onion, sausages, rosemary, chopped tomatoes, cream, seasoning)
Tues - Coq au vin
Wed - ravioli (olive oil, pepper and Parmesan for sauce)
Thurs - duck legs, leeks and mash
Fri - fajitas

We went through the freezer this morning before doing our weekly food shop and tried to use up as much meat as possible.

My favourite books for inspiration are a little taste of Thailand (love chicken with cashew nuts), Leiths Cookery Bible, Dairy cookbook.

A couple of my favourite mid week meals are sausage and leek supper, stroganoff and mustard pork chops

Sun - Jamaican chicken fricassee with rice and peas and cucumber salad. Fresh juicy Mango
Mon - Moussaka with green salad
Tues - Veggie Mexican, fajitas, leftover beans, yoghurt and gucca-mouldy*
Wed - Big hearty celery soup with dumplings.
Thurs - I don't bloody know. Who's cooking tonight?
Fri - wine, wine grin baked potatoes with coleslaw

* guacamole as my GC call it.

Today - gammon and sugar slow cooker recipe with veg and potatoes. Nachos and fruit for tea

Tomorrow - dunno - prob carbonara with left over gammon
Tuesday - DD has hospital appointment 2 hours drive away at regional centre at 6.30pm (WTF) so me and she will eat McDs or similar on the way
Wednesday - dunno - something from freezer
Thursday - dunno
Fri/Sat/Sun they are at their dads so not my problem and I shall eat cheese toasties and baked potatoes and frozen pizza and salads and other stuff that requires NO EFFORT

Thurs - casserole of some sort in the slow cooker
Fri - chicken and ratatouille
Sat - eating out.
I used to drive myself nuts trying to figure out what to eat each night after a day at work. Meal planning has saved my sanity grin

Sunday was roast beef, yorkshires, carrots, roast potatoes
Monday - spaghetti bolognaise
Tuesday - tomato soup and bacon rolls (busy night with athletics and badminton so we all eat at different times)
Weds - sausages, new potatoes, broccoli
Thurs - chicken and bean casserole
Fri - pasta with pesto, salmon and pine nuts
Sat - chicken korma, rice and indian nibbles such as samosas etc

Sun, roast pork, pots and veg
Mon, pasta with left over pork
Tues, salmon salad and pots
Weds, fish risotto
Thurs, Chicken drumsticks (not sure what with - rice and tomato base sauce or pots and veg)
Fri, BBQ (sausages, steak) salad,. corn on the cob and pots
Sat, home made fish, chips and peas (boys will have caught the fish) failing that tinned tuna fish cakes and peas!

We aren't veggie but eat a lot of vegetarian, partly because meat is so damn expensive. I honestly don't know how people get by without meal planning! How do you know what to buy in the supermarket?

Sunday: was fish pie with green veg on the side, then rhubarb & ginger crumble

Mon: spinach souflee (nicer than it sounds!)

Tues: warm griddled veg and puy lentil salad and slice of bread

Weds: homemade beetroot pizza and salad

Thurs: breaded chicken strips (made from scratch), potato wedges and frozen peas

Fri: veg stew thing which is in the freezer

we like salad!

OMG, Wigeon, do you really mean beetroot pizza? Or do you mean homemade pizza and beetroot salad? If you do mean beetroot pizza please let me have the recipe!
