have you ever frozen homemade muffins

warm, fresh muffins Mmm much nicer than cold frozen ones

Frozen muffin + 30secs in a microwave = warm "fresh" muffin.

Adjust for size of muffin/strength of microwave.

Don't skip it as it explains what each ingredients does and how it works so you can troubleshoot any probs and make up your own combinations. Really excellent book and great value! No link, just very impressed customer. grin

I only ever had one disaster - made banana muffins and forgot to add the salt. Tasted 'soapy' as sod. bicarb not neutralised by the salt but realised why straightaway.
Also can bake recipe in tin if want to make big cake rather than singles.
Better stop now as getting carried away with the gospel of the muffin! blush wink

Its one and a half teaspoons of cinnamon and half a teaspoon of salt.

Muffins are very easy as long as you don't overmix.

Also agree with warm freshly cooked muffins beings lovely, but not feasible all the time!
