Your best storecupboard ingredient recipes to use up sausages!

Had a bit of a disastrous night last night, DS was sick repeatedly, and the freezer door was left slightly ajar so have accidentally thawed a load of food.

Have figured out what to do with most of it, but I have an entire bag full of cocktail sausages which needs using up, and it's just me and DS - I don't want to overload his tummy so need some way of cooking them up for future use preferably. Maybe sausage casserole or some kind of spicy tomato sauce with them for pasta?

With recipes if possible please - I wouldn't know where to start with a casserole.

jambalaya? cut chipolatas into 3pieces each. fry in big pan until cooked. next add onion, green chilli if you want, and 2 sticks finely chopped celery. next add 2 chopped peppers and garlic.

pour in 300g long grain rice and mix well. then add one tin chopped tomatoes, 600ml chicken or veg stock, a dash or Worcester sauce and a touch of Tabasco if you want. cover, boil and simmer for 30mins or so, adding more water if it's getting too dry.

seriously yummy.

cassoulet (ish)?
fry diced onions, celery and carrots until soft, add bacon and garlic, fry until cooked
then add a glass of wine, let the alcohol cook away for a bit, add tinned toms, cannelini beans, and your ( briefly browed) sausages. let it simmer slowly or cook in the oven until nice and thick. you can top with breadcrumbs if doing it in the oven. serve with crusty buttered bread, and a green salad or chips.

Mini toad in the holes using a muffin or cupcake tin.. These are freezable so you can make loads.

Sorry I've actually never tried freezing it. Just seen that's the whole reason you want a recipe! I don't know what rice is like to freeze...

sausage casserole:

cut saus into inch long pieces (cocktail saus prob ok whole or halved)
chop onion, carrots, celery, mushrooms, peppers or whatever other veg you have to hand. would say onion or leek good, mixed frozen veg would do.

fry off sausages to colour, chuck in veg and stir. Add chopped tomatoes or passata, herbs or chilli powder/flakes/fresh chopped to taste.

simmer for an hour or so, or stick in a medium oven, or slow cooker for 4 hours high, 6 or more low. (if in slow cooker use fewer tomatoes as less liquid is needed, or bung in red lentils too)

or

fry saus and onion 1/2 onion per person as before. add chopped eating apples (1 per person), maybe carrot or parsnip and sweet pots( all 1/2 per person), and apple juice or cider to cover if doing on stove, 1/3 way up mix if in slow cooker. cook for similar length of time to above.
