I have mastered mushroom, butternut squash, cauliflower & potato (with grated cheese topping) and veg (butt sq, carrots and parsnip). I've started making a big pot of soup at the beginning of the week that will do me for lunches for a few days, and can freeze so can mix and match. Just looking for inspiration now please Smile.

Someone posted a magic lentil soup recipe (basically lentils, onion, tinned toms and stock). You make a huge pot and the next day it is even thicker! I love lentil soup and batch make it, freeze in portion sized tubs and take them to work to heat up in the mictowave.

I don't really make soup but my favourite only recipe is for spicy chicken soup. It's a bit like a stew but that's how I like soup!
What I use is
chicken
chorizo
chopped toms
chilli powder
any veg you've got - I like sweet potato and peppers
Garlic (lots!)
Onion and chicken stock.
Just cook the chicken add the chorizo then whack it all in and cook for about an hour. Bloomin' lush! Grin

I really like this Butter bean and sweetcorn chowder. It has a sweet and creamy taste. Mmmm. It's a hit with my little one too. I don't know why I don't make it more often.

Beetroot is yummy. Didn't think the dc would go for it but this recipe is fab. It has a smokey bbq type flavour. Lovely with home made seedy rolls

Spiced lentil soup with coconut milk.
Pearl barley and vege.
Leek and potato.

I like soups which don't need blitzing as cooking a soup is easy but blitzing is a pain.
