To go with Carribean-ish buffet party menu jobber.

GetorfsaMotherfuckingMorrisMan Thu 03-Jan-13 15:15:19

I have made it once to go with jerk chicken and it was lovely.

Slubberdegullion Thu 03-Jan-13 15:18:30

Allured in capitals GetOrf, that is most allured indeed.

Am doing a slow roast rook with Carribean rub and a BNS + black bean jerk curry and various sides wot are forrin.

I would like coconut but am sorely afraid that it's a built marmitey and folk with have the sad rice face upon tasting.

Slubberdegullion Thu 03-Jan-13 15:20:33

Not rook. I am not roasting a rook. Hard times not that bad.

A pig, pork in fact, no Corvids being cooked on Twelth night.

GetorfsaMotherfuckingMorrisMan Thu 03-Jan-13 15:22:52

I think it is a bit marmitey, tbh. I loved it but could understand why people wouldn't.

Thing is rice and peas would taste a bit dull without the coconut milk imo.

Slubberdegullion Thu 03-Jan-13 15:25:27

Well I do too. Big old bowl of rice and peas, pfft, that's a Tuesday night can't be arsed dinner isn't it, with a chop.

As you have done it before does it need the same amount of cooking time as normal basmati? Bloody good food mag has me cooking it in a pan and then transferring it to a microwave. Bugger that.

SwedishEdith Thu 03-Jan-13 15:29:25

Oh, it's lovely - wouldn't have considered marmitey at all. And dead easy.

GetorfsaMotherfuckingMorrisMan Thu 03-Jan-13 15:33:43

No, don't bother with the microwave bloody hell. It just takes the normal basmati time ime. I would recommend that you don't use kidney beans though - skin's too tough ime. Black eyed peas would be better.

Slubberdegullion Thu 03-Jan-13 15:36:25

Oh, do I need to add beans to the rice too? Black beans going into the curry.

Recipe is just softened onions in butter, rice and coconut milk.

GetorfsaMotherfuckingMorrisMan Thu 03-Jan-13 15:40:44

Oh, if they are in the curry then no.

But that's what I meant about rice and peas (not birds eye green garden peas, in this context it refers to beans which go in the rice).

God I am hungry now.

iseenodust Thu 03-Jan-13 15:45:22

Yum coconut rice. Had some in a restaurant recently and they put twiddley coconut shavings on top (was with Malaysian curry).

JustAHolyFool Thu 03-Jan-13 15:45:37

Oh I LOOOOVE coconut rice.

Slubberdegullion Thu 03-Jan-13 15:45:58

OK I see about the peas thing.

Ta for assistance, will go with the coconut.

Slubberdegullion Thu 03-Jan-13 15:47:06

GetorfsaMotherfuckingMorrisMan Thu 03-Jan-13 15:53:03

I don't have a recipe really.

Fry onion and garlic until soft, add a teaspoon of allspice and a chopped scotch bonnet (you can leave the chilli out). Add some thyme if you have it (I sometimes forget). A can of black eyed peas (drained). Then throw in some washed basmati, and a can of coconut milk and some water (use about 200g of rice) and cook on a low simmer until it's done. Loads of salt.

GetorfsaMotherfuckingMorrisMan Thu 03-Jan-13 15:54:40

The thing is with coconut rice is that it's like stuffing, parsnip puree and cheesey mashed potato - it's the kind of thing you can eat straight out of the pan with a wooden spoon standing up by the cooker, sod everyone else.

Slubberdegullion Thu 03-Jan-13 15:58:34

Goodness me. Am I going to have to be batting folk away from my buffet table warming tray as I reveal the rice from the cunning warming shelf within?

<hostess warming tray stealth boast>

GetorfsaMotherfuckingMorrisMan Thu 03-Jan-13 15:59:57

lol at hostess trolley.

My Sindy doll had one of those. It had little silver plastic tureens filled with carrots and peas (lost by Boxing day of course).

Slubberdegullion Thu 03-Jan-13 16:17:07

Oh not a trolley. Am working my way up to a trolley. Really need a house with a dining room to warrant getting a trolley. No I have just a tray.
I never had the Sindy version either sad

Allured here too - LOVE Caribbean food! Can I come for tea please? I make a great rum punch with nutmeg, the perfect drink to go with your feast {grin}
