shopping list for healthy meals to feed 4....help me Im so bored(11 Posts)
Forgot our go-to, believe it or not! Any meat (assuming you're not a veggie, of course) with quick and easy roast veg. We normally grab a few of courgettes/aubergine/mushrooms/peppers/tomatoes/red onion/anything else of a different colour and chop them into similarly sized chunks. Throw on some oil, a clove of garlic, whatever herbs you grab (rosemary, thyme and basil work well) and salt/pepper, bung it in the oven for about 30 minutes and enjoy. Favourite accompaniments are pork chops, chicken wrapped in bacon (stuffed with tomatoes & mozzarella if feeling decadent) or salmon. You can normally throw the meat straight on top of the veg and leave it all in together until the meat's done
Just re that back and there are no chicken or beef dishes we hardly eat any meat!! Had chicken fajitas tonight though and when I do use mince I buy a 250g pack and add grated butternut squash and other veg to bulk it out!
Salmon, capers and pasta, squeeze of lemon, drizzle of extra virgin and a handful of chopped parsley, one of the kids faves!
Stir fried prawns, chorizo and courgettes with chilli and garlic, handful of leaves served in a wrap.
Sweet potato, chick pea and spinach curry. Just fry some onions and garlic and a few cardamon pods if you have some add the sweet potatoes, two tbs curry paste, a can of tomatoes, half a can of coconut milk, a can of chicken/veg stock then simmer until the potato is soft. Then add the chickpeas and half a bag of spinach cook for a few minutes and then serve with rice.
Butter bean and chorizo stew.
Just sauté a few peppers, an onion a courgette and a sweet potato add the chorizo and a teaspoon each of smoked paprika and cumin powder then add a tin of tomatoes and the butter beans with about a can of stock cook until veg is tender sprinkle with fresh chilli and chopped parsley, and eat!
All of the above are my go to meals and family faves.
Ooh also forgot pasta and pesto with feta , spinach, cherry toms and pine nuts.
How about moussaka, you can batch cook the spag Bol and use it for four meals, spag Bol, lasagne, moussaka and then chilli.
I'm viewing this thread with interest as we're stuck in a rut too. I seem to just make curry, pasta bake and shepherd's pie in rotation.
I made a lovely spicy tomato and lentil soup for lunch but DP is one of those men who thinks soup isn't a meal. Neither are jacket potatoes apparently.
Chicken risotto also goes down well. Risotto rice and a knob of butter, onions, chicken stock a dash of wine and a handful of peas with some chopped chicken. Then grate a bit of Parmesan on top. Really filling and easy.
We are currently about to tuck into salmon with spicy cous cous. Really quick and easy and a favourite here.
We also all like Moroccan chicken with peppers a tin of tomatoes and half a jar of Tagine paste Serve with cous cous or just with naan bread.
Leek and potato soup a big favourite here. I usually serve it with fresh bite size rolls.
I do a big batch and then add chopped bacon or chorizo on day two.
Day three i add chicken and put a pie top on - chicken pie.
It all freezes very well and defrosts.
The basic recipe is swet the leeks in a little butter/ oil/ water till they whilt (around 10 minutes), add peeled chopped potatos, cover in veg or chicken stock, season, simmer till potatos are cooked, use a hand held blitzer and serve.
Red lentil soup is easy and most children seem to like it, especially if you blend it.
Wraps - I stuff them with a mixture of roasted butternut, chickpeas, spinach and fried onions: you can make them as spicy or mild as you want - then I top them with grated cheese and bake. Eat with salad/salsa.
Stir fries with tofu or cashew nuts or omelette strips for protein.
I'm a sucker for Lasagne, or a quick and easy soup in this weather:
1 head broccoli
1 - 2 leeks
1/2 - 1 container cream (depending on how luxurious you feel)
1 - 2 cups stock (or a stock cube if you don't have any stock leftover)
A healthy chunk of stilton
Herbs & spices to season - I use rosemary, pepper & nutmeg
Chop broccoli and leeks roughly & saute in pan with butter, rosemary and pepper.
Add about 1/4 cup of stock & boil with lid on.
When all's tender (about 5-10 mins), nab a hand blender and blitz it.
Add rest of stock, cream & stilton.
Voila! Serve with a drop of leftover cream and a sprinkle of nutmeg on top.
I cook everything (mostly) from scratch but im in a rut of spag bol ...and cheese pasta
dd's are 2 & 6,
hungry DP and I am alternate day fasting so like things I can batch cook & reheat for when Im not eating so I dont have to cook for ages and then
suffer not eat it
I buy all meat from butcher, but tbh we dont eat that much (sausages, caseroles, chicken thats it)
what veg, pulses etc do I need - help me meal plan for the next week as we are running out of essentails and Im off to
