I'd do a selection of veg curries.

Roasted root veg risotto - it's lovely, add a bit of honey to the veg and add to risotto rice near the end. You can make mash and freeze it for use another time or make potato cakes out of it. Or a big veg pie maybe.

Vegetable cobbler

(like veggie stew but pan fried first) with tomatoes and stock and puree. With cheese and yogurt based scones on top.

Veg crumble, with a tomatoey sauce over the roasted veg, maybe some butter beans too, and a crumble with cheese and oats, with a bit of natural yoghurt drizzled over. For some reason, I love this.
