If you blanch/freeze your sprouts in advance

Do you defrost them before cooking or cook from frozen? I've done this before but can't remember and I have a mountain of sprouts so don't want to be prepping on xmas day!

I asked for advice on this t'other day.

Advice received was to blanch for 5 minutes and plunge into iced water, then they'll keep in fridge overnight for a quick fry up on the day. Is Christmas eve cooking ok?

I did a test run and it worked well.

Hmm, really want to do them tomorrow as we've got loads of people coming in the evening then rather a lot planned for xmas eve!
