What's your best whole duck recipe? Something festive ideally.

dry the duck, stab it all over with a fork and put in the oven.

Half a botle of red wine and half a jar of cherry jam, into a pan, heat until you get a nice thick sauce

Rub your duck with a mixture of salt & Sichuan pepper & star anise

Leave for up to 8 hours in the fridge.

Makes the most delicious skin you have ever eaten.
