Help me plan my Christmas week menu using up my whoopsie bargains

I've been collecting and freezing meat from the whoopsie counter for the past month now, ready for Christmas.

I have;
Half a leg of Lamb £3.48
8 large chicken breasts £1.20
large boned shoulder of pork £1.90
duck crown £3.00
1kg minced lamb £3.00
750g sausage meat £1.10

It can't be anything cheesy or too garlicy (fussy dh), and I'd prefare ideas without too many ingredients. I'm a competent cook and can follow a recipe but I dont want to end up spending £10 on spices if a jar of sauce would get a similar result iyswim. Oh and meals need to feed 5 people.

Why not butterfly the chicken breasts. Roll in flour then egg then breadcrumbs. I add Parmesan to the breadcrumbs. Then fry in a pan and finish off the oven for about 12 mins depending on size of meat. This makes the breast meat go further aswell as you are opening them up. It will cook quicker as its thinner. I serve with boiled potatoes, peas and broccoli.

Disclaimer - no idea about weights, so no idea how much will feed how many!

As Christmas week tends to be quite big meaty meal heavy, I'd have thought that would last you ages.
However - some suggestions:

  • Sling the lamb - yuck! Alternatively, rosemary and (bit of) garlic roast
  • Chicken breasts - use in stir fry/curry and save some in freezer
  • Pork - some kind of pulled pork served with pickles and rolls
  • Duck crown - shredded duck pancakes, with plain (or chicken) chow mein and egg fried rice
  • Minced lamb - kofte, burgers, shepherds pie
  • sausagemeat - burgers again, stuffing for Christmas/Boxing Day, Jamie O's sausage pasta

Where is this 'whoopsie' counter of which you speak? Sounds fab.
