Enchilada recipe

Does anyone have a nice recipe for chicken enchiladas? We've used those Old El Paso kits and its been a big hit with ds1 (4yo) but I'd prefer for ds2 (8 months) not to have the sauce like that just yet (in terms of sugar / salt content or whatever - a bit PSB but there we go!).

So I'd like a recipe I can cook myself that tastes like the kit!
