carrot and red pepper is good - sweat off an onion and 2 peppers in a little olive oil, add 3 or 4 carrots and a pint of stock (I use 1 chicken/1 veggie oxo cubes) simmer for 20 min, liquidise, eat hot or cold.

Leek and potato. Chop leeks and potatoes, one medium leek per two people, plus two medium spuds.

Sweat in a little oil, add stock, chicken or veg, and cook until the spuds are done.

I don't puree this soup. I like it chunky and it's so tasty and easy.

Roast butternut squash (unpeeled but cut into chunks).

Sweat 1 medium onion in butter for 7 mins, then add 1 tap ground cumin & a clove of chopped garlic. Cook for another minute until fragrant.

Add roast squash & 600ml stock. Boil for 10 mins then blitz.

Really really good!
