Don't like it 'neat' on crackers. There must be something nice I can do with it. Any ideas ?

Delicious in toasted sandwiches.

Stilton and broccoli soup (or stilton & onion soup which I made once when I didn' have broccoli and is even more delicious).

Grated on jacket potatoes

Quiche

Grilled on top of chicken/pork/steak

Send it to me - I love stilton Grin

Melted with a bit of milk and mixed with spinach makes amazing pasta sauce. Works wonderfully with spaghetti.

Mushroom, walnut and blue cheese pastries

Get a sheet of puff pastry and cut into 4.
Sautee some mushrooms and mix in with walnuts and crumbled blue cheese.
Score an edge around the pastry and put mushroom mixture inside margin. Brush pastry edge with a beaten egg and then bake for approx 15-20 mins.

New potatoes or just small waxy ones crushed with Stilton crumbled in served with steak is particularly tasty!

I've never had a big lump of Stilton long enough to try any recipes Sad
DS & DH are blue cheese fiends and polish off gigantic quantities usually when I'm not looking.
DH has however once made it grilled on top of steak for a special dinner it was yum.

Crumble it over some spicy chicken wings and pop them in the oven to heat through. Lovely cheesy topping!

Make a stilton sauce and have with pasta. I do it with chorizo, crispy bacon chopped up, asparagus, onion & peas. Then add cream and stilton. Add pasta. My fave food ever.

Warm up some cut & squeezed-open figs under the grill and put a little chunk of stilton on until it's melted. Lovely.

I had a rib of beef the other weekend with a stilton sauce which was To Die For.

From memory, it was stilton, creme fraiche, gherkins, lemon juice, shallots and tarragon whizzed up in a food processor .

I seriously recommend it. It was even better the next day with cold rare roast beef.

Depends whether blue or white

White stilton is lovely in sandwiches with thinly sliced tomato and black pepper - got to be really good wholemeal bread though.
