What's for vegetarian dinner tonight?

I've just made the mix and done the tatties for this. I've made similar before but Delia's version with just red lentils. With this I didn't have enough green so added some red too, should be ok? It's all on cooking ready to assemble. There's tons of the filling though. Am making up one to freeze but think there'll be extra filling too for another pie?

So what are you making for vegetarian dinner? I've started these threads a few times and always get lots of ideas Smile

Hmm As I suspected the amount of veg stock is too much. I've had to try to thicken the mix with cornflour and am simmering for a bit longer. No one else commented on this though?

That worked and the sauce is lush. One pie is in the oven and another cooling ready for the freezer and as suspected filling left over. What a bargain Smile

We had meat last night I started another thread on that yesterday, chicken chorizo and chickpea casserole. That was lush too. I love vegetarian food though, dp isn't always enthusiastic and dss will eat anything. Once dp gets it though he loves it, he's just a big meat eater. I could turn vegetarian tbh.

Ooo sounds lush, either will be great.

Veggie every night in this house! Boring spinach and ricotta pasta, salad and garlic bread tonight.

Tomorrow I'm doing fake mince lasagne :)

That sounds delicious, i think I'll write down the recipe. We are having chickpea and cauliflower curry I think (DH is cooking).

just finished stuffing myself with roasted parsnip, butternut squash, tomato & onions with green beans, couscous, green lentils, fresh parsley & mint & loads of harissa all mixed up together in a big pile in the roasting tin served with a green salad & mustard dressing

one of my more successful "roast everything thats not nailed down & add rice, couscous or similar" meals :)

Happy Cow burgers from Jamies 15min meals book, served with sweet potato wedges, mushrooms and padron peppers that I carried home from Barcelona. It was yummy but I think we will be eating padron peppers for a while.

Veggie every night here too. Tonight was cauliflower cheese, garlic and herb roast potatoes and cabbage. Needed to finish up what was left in the veg box. Bit carb heavy but unbelievably my kids actually ate the lot!

Well it was delicious, Dss ate it all and dp loved it as I thought he would. I have a freezer full of it so no doubt we'll have it next week too?

rainbow your roasting mix sounds good.

geogteach I haven't seen that recipe I'll try to find it? We like vegetarian burgers.

Oh and I forgot the broccoli Blush It's fresh though only bought it yesterday so we'll have it tomorrow night.

Well we're having meat tonight but I cook about 70/30 veggie normally. Loving some of the ideas on this thread and making some notes! Smile
