Made this for dinner tonight and it's so lush, even ds2 is eating it and it has chilli in it!

Chicken, chorizo and chickpea casserole served with lots of crusty bread to mop up the juices.
I only had 2 chicken breasts defrosted so added a bit extra veg, chopped red pepper added at last stage and extra carrots. There was plenty for 4 of us though.
I was half expecting ds2 to complain saying 'it's a bit spicy' but no, he enjoyed it. Smile

There was a similar recipe in my DS's "Student Cooking" cookbook. I made him practice this before he went to uni - 'twas lovely! I've cooked it a couple of time since - sadly I think he's sticking by the beans on toast, cereal and lager diet!

I think I'll get ds1 to have a go at making it, thanks for the idea FG. He's 15 and into cooking at the moment. I'm slowly preparing him for Uni too. Although tbh he'll most likely resort to pizza?

Looks nice. Did you serve it with anything or is it ok on its own (or maybe with some nice bread?)

We had crusty bread with it but I had planned to put some broccoli with it, forgot though Blush I'll use that in tonight's dinner. Something vegetarian, haven't decided yet?

Am doing this tonight. I'll use the broccoli on the side. I've just made the lentil mix and the potatoes are on boiling. There's loads of filling though and reading the comments it sounds like I'll have spare? I made this amount and will make up another dish to freeze, eat one tonight and freeze any spare filling. Then if I'm in a hurry can just make up so me mash tatties and put on top of the filling. The comments are positive and it does sound nice. I've made Delia's veggie shepherd's pie a few times and that's lovely. Very similar tbh?
