i have never made toad in the hole , please give me your best recipe

I don't know how I have got to this age without making one but I feel the time is right .

This Nigella one is nice

I usually just cook sausages until only just under done (actually, I cook them all the way done but I'm OTT with bangers) in a deep sided tray letting all the fat run, then make up a good volume of pancake batter, whack it on top of the sausages, turn up the oven and stick in. It often doesn't puff up, but sometimes it does!

It's runny enough that as long as the sausages are evenly spaced they'll sort themselves out.

Use a tin, not a ceramic dish - that's my advice to avoid sogginess.
