Wash the lentils, cover with water, add a teaspoon of turmeric then boil till they turn yellow. (do not add salt till they are cooked) Seperately, chop up an onion and fry up with oil & a tablespoon of curry paste. Add onion mixture and a dash of milk & spinach. Cook till spinach softens.
I had it this evening (sans spinach) with rice & chicken curry. yum!!
MerylStrop I LOVE Steve's spiced lentils, where did you find that from? I have a tattered old photocopy of a photocopy I am terrified of losing! Tethers end it's o tasty and definitely worth the faff, plus freezes really well.
