I have had a melt down tonight, I can not find quick easy meals?. I have cried into my kids

So, do you have a slow cooker? Trustworthy oven timer?

Oh ok sorry - get your partner to cook if you have a partner?!! I don't cook but my dh does - we both play to our strengths. I'm sorry you are struggling.

And if I HAVE to 'cook' I manage to rustle up healthy stuff like scrambled eggs, picnics (cold plate of cheese, salad, grapes, meat etc), jacket potatoes. All good and simple and non-processed.

  1. Fish and easy-cook carbs- micro rice/ chips/ couscous/ etc


  1. Slow cooker - casseroles/ tagines/ stews/etc

Pasta, passata, sauages and random herbs
Jacket potatoes and tuna/beans/corned beef/cheese
Scrambled eggs on toast
packet of rissoto and shove in mushrooms and chopped bacon or ham

Agree that Jamie Oliver is what you need.

The 30 minute meals has puddings as well which I just ignore, or it ends up taking longer than 30 mins. There's some fab main meal though.

I've just got the 15 min meals today and I'm really impressed. I can't wait to try some of the recipes.

omlette, bag of salad and new potatos

spinach and watercress soup (really easy - get bag of spinach and watercress plus one potatos cubed fry in a good dob of butter, add stock, bring to boil then simmer for about 10-15 minutes while you have a glass of wine and whizz with hand blender. Serve with a swirl of yogurt or cream and bread and cheese or shop brought garlic bread

1 -I have a slow cooker,no ideas what to do?.
2 - Dp works long hours I have to cook,I have no choice.
3- My family love pasta ,jacket potatoes and tuna/corned beef/cheese/chilli.
4- not sure about ready made meals because of the salt content?.

Thank you for your advice,I am just finding it hard.

Uncle Bens rice, frozen veg and a jar of curry sauce... 6 min!!!
Pasta and a jar of dolmio with some mince ..20min
Noodles and a bag of beansprouts, bag of stir fry sauce, precooked chicken fillets shredded in for a quick chow mein. .. 8 min (because our wok isn't big enough to do it all at once)
Jacket potatoes cooked in microwave, put in oven after to crisp up... 20 min
Oven cook fish and oven chips with peas/sweetcorn ....20min
Omelette with cheese, ham and steamed veg ... 10min

Big old batches of Bolognese sauce, sheps pie, beef stew, baked potatoes, veg prepped the night before, boring but what git me through the first bit was planning..

Batch cook at weekends and just defrost at mealtimes.

My kids change their mind about veg on a weekly basis so I put hidden veg in everything i.e spag bol, pasta bakes, casseroles, and they eat it all up without fussing.

Also- poor man's pizza- Pitta bread with tomato paste and cheese topped with anything like and baked for 10-15 mins. You can pile veg on so you don't need anything with them.

Are you struggling for ideas for the end of the day (after a day at work?).

I work 2 days a week & have 3 dcs & consider myself to be a pretty rubbish cook, so I always make sure food is ready the day before for after work days.

Easiest things we cook & store in the fridge are bolognaise and fish pie.

Easy things to cook on the day:
Salmon fillets or chicken in oven with roast potatoes / rice & veg.
Pasta & sauce
Pizza, fish finger etc meals.

You'll get into a rythymn - a month back is still early days. And often the answer is that actually, you can't produce a half-decent quality meal for the whole family at the end of a working day when you're knackered and the kids need attention. Once you get going, though, you'll have supplies in the freezer - batch cook at weekends and those portions of spag bol or whatever will help you cope on the can't cope days. Never ever cook one portion of anything if you can cook two or three portions.

Slow cookers are especially fantastic when everyone is eating at different times. Make the chilli when you have ten mins in the daytime or at weekends and just bung it in for anything up to around 6 hours on low. you don't even need rice, just serve good bread/tortilla chips for dipping and scooping.

I made a lasagne in a slow cooker recently and it was very good.

Oh and meatball subs are excellent in a slow cooker- cook meatballs and sauce in the slow cooker and just provide bread and grated cheese for people whenever they are ready to eat.

Fajitas are a quickie especially if you buy the chicken cut into chunks

Fresh pasta takes 3 minutes to cook
