Beef bourgouignon (or however its spelt)

Does anyone have a really good recipe for this? Am cooking it today for DHs surprise birthday meal this coming weekend, so will need to freeze it. If you could also tell me at what stage it should go in the freezer, that would be great. I'm veggie so any guidance on cuts of meat would be useful too.
