so i have a whole chicken.....

and am looking for inspiration, rather than just roasting it.

Help me please.

Welsh cawl. Traditionally made with lamb, but can be made with any meat.

Boil the chicken whole. Take it out of the water. Let the water cool and then skim off any scum. Boil some root veg in the chicken stock (potatoes, swede, carrots - leeks are nice too). While the veg are cooking, take all the chicken flesh off the bones and remove the skin. When the veg are cooked, add the chicken bits back in. Add some seasoning.

Traditionally served with bread and cheese - "Cawl a caws".
