Fennel

Pretending to be posh - have got an Abel & Cole veg box this morning, and it has fennel in it - not a clue what to do with it!
Help?

YUM!

You can either have it raw chopped into a salad, or you can roast it with other vegetables (it's nice with peppers, tomatoes and onions). I think you can braise it as well, I bet it would be nice braised in white wine and good veg stock.

I like it best with Salmon, I slice it up and place it with some spring onions onto a piece of greaseproof paper - place the salmon on top, a slug of white wine, a splash of olive oil and a squirt of lemon - a bit of dill if you have it, then wrap it all up and bake in the oven for 20-30 minutes.

One recipe Jamie O has (30 min meals) is slice in magimix with a bunch of radishes. Add a squirt of lemon juice and you've got a good crunchy winter salad.

Fennel and orange salad is yum.
Fennel risotto is also yum.

do you eat fish?

very thinly slice the fennel and gently fry until soft in butter & oil mix, add plaice fillets and gently cook. remove fish and fennel to warmed dish then deglaze pan with a little white wine, add creme fraiche to make sauce then serve with fish etc

delish with new pots and french beans

I saw Nigel Slater gently fry one (sliced obv) the other day on telly, he then added basil and some crumbled feta and the stirred it in to linguine. Looked delicious.

Hugh FW also has a good puy lentil and fennel salad/side dish with a great lemon dressing.
