Here's the challenge.

I have
3 chicken legs
2 large carrots
1/2 a large red onion
tin tomatoes
butter beans
chicken oxo
thyme or herbs de provence

Can anyone help me make a meal

Fry off your legs, do same with veggies, whack in a casserole with everything else and put in a medium oven 'till done. What else can you do with it??Or ,try putting it in the slow cooker.
I wouldn't start faffing about doing complicated stuff, a nice casserole is just what you need in this weather.

I'd seaspn the the chicken legs with some herbs and bake separately so that they are crisp. Then I'd make a kind of rough ratatouille with the onions, carrots, peppers, mushrooms and tomatoes. Serve the butterbeans whole alongside with a few herbs and knob of butter.
