dairy free cake and biscuits recipes

hi

ebf 4mo dd seems to have a cows milk intolerance so i need to steer clear of things containing butter, meaning cake is difficult to find and also difficult to make (well difficult with my old recipes anyway!). i'm guessing oil is a good substitute for butter but my attempt at brownies with trex were not amazing.

please tell me your best cows milk free cake and biscuit recipes.

egg is fine btw.

I use Pure dairy free spread just as I'd use butter in recipes ... Works fine for cakes and biscuits.

Muffins are typically made with oil so maybe muffin recipes would be a good option. Otherwise, I would use Pure or Stork in place of butter

Fay Ripley has a fab carrot cake recipe in her most recent book. It uses oil instead of butter. It does have a cream cheese based icing but you could replace with glacé icing instead.

yep i agree - we use pure sunflower instead of butter, and muffins are a good alternative as they use oil. i also make the cranks carrot cake with sunflower oil (just omit the cream cheese icing). i think stork contains buttermilk so not tried that, and DD also intolerant to soya so we dont have that option. you can use pure cocoa / dark chocolate for chocolate cakes as they are dairy free. there is a ready made vanilla butter cream (betty crocker i think?) that seems to be butter free which is not too bad.

its hard at first being dairy free isnt it - i too gave up dairy for my EBF DD. she is now 2.5 and still feeding though i have re-introduced dairy (slowly) to my diet and its not affecting her so much, but then she feeds a lot less these days! you will be surprised how quickly you get used to it!

I second Pure as a good dairy free fat for adapting "ordinary" recopies.

Thanks all. Im going to try the pure spread. It would be great to be able to still bake our favorite recipes!

There's a good book I use called Vegan Baking by Linda Mazjlik.
