Pineapple upside down cake

The kids like it lots and it seemed like a nice treat for tomorrow. But I hate hote pineapple. Do you think I could substitute apples? I imagine they would go softer and brown and be a bit tarte tatin but minus pastry. I did google some recipes but they involved caramel sauce and I can't be faffed. I just want to put some apples in a pan with brown sugar and add the sponge mixture. It'll work won't it?

Yep it should work.

You should try pear and chocolate sponge pudding. Its amazing!

You can it even has a name, google Eve's pudding and you'll get various recipes.grin

It's yummy, cookery club did it.

My mother used to make that. Hot pears bother me too. Someting about the texture.

Just googled Eve's pudding. That's a sort of batter though. I was thinking of the sort of sponge you would use for Victoria sponge. Just cake.

Yeah, now Im thinking I always eat it cold grin

Vic sponge wouldnt really work because the apples have too much moisture. I think.

My mum used to do it with apricots from the tin.

FIrstly, you can eat the cake cold if you don't like hot pineapple.

I made it the other day but used tinned rhubarb instead of pineapple as DS1 had had that and the kids loved it. Clearly the rhubarb was in syrup so nice and juicy even though I had drained the tin and there was no issue with too much mositure.

Apricots too have that slippery texture. Will I have to cook the apples? May just make crumble. That can't fail.

Eve's Pudding is raw cooking apples and sponge. The apples cook quickly enough that they're all fluffy and soft by the time the sponge is done. This recipe looks OK.

Okay. Also good are plums roasted/baked and served with creme fraiche. I love fruit so much.
