Hit me with your simple "tex mex" mixtures

The plan was to make burritos with pork, courgette and a jar of M&S Mole sauce.

M&S are all out of mole sauce. I have the tortillas, an already ripe avocado, the soured cream and refried beans. And I've opened the soured cream for tonight's pudding, so I need a new filling asap made from stuff I can buy locally. (ie in the Co-op).

Can you help?

Tex mex spice mix - cumin, oregano, garlic and chilli, or I use paprika as I baby eats too.
