Going skiing in January with vegetarians, help with hearty suppers please!

We'll be staying in an apartment and taking it in turns to cook; I suspect the kitchen will have only basic equipment and the supermarket not much in the way of exotic ingredients (may be wrong though).

Everyone will be very hungry and tired in the evenings, there will be six of us (inc. 2 dcs), and I need some good vegetarian recipes! So far I've thought of roast vegetable lasagne, some sort of vegetable curry (anyone got a failsafe crowd pleaser?), risotto, vegetarian cottage pie with sweet potato mash (thought I've made that a few times and it does turn out as a sort of orange sludge on the plate).

I would be very grateful for any suggestions for REALLY DELICIOUS and easy vegetarian meals! Thank you Smile

I have made Gordon Ramsay's Malaysian curry before but replaced the chicken with peppers etc. it was really good. You would have to take some of the spices with you, but they wouldn't take up much space/ weight.

Veggie stew with dumplings (using veggie suet)
Pasta bake
Stir fries with plenty of egg noodles and make your own sweet n sour sauce

Ratatouille and rice
Veggie spag bol
Massive frittata, crusty bread and salad


Beans are good and hearty.

Absolutely love Delia Vegetable tagine. I think it's in her vegetarian book but you might be able to find something similar online. You could use different veg depending on what is available, use lemons instead of preserved lemons. From memory it does use harissa paste, but I would think you can substitute chilli or something.

Veg chilli? Use variety of beans and skip the minced beef.

I've made this multiple times for veggies and meat eaters alike it is GORGEOUS and rich and warming.

And you can't go wrong with bean chilli. Make a massive vat because with no meat to go off so you can be lax with food hygiene it will sit happily in the saucepan overnight and still be good the next day. You could have it with rice one night and in wraps the next night with guacamole and salsa as burritos. Or on jackets.

Deffo veggie chilli.
Deffo curry.
I've been doing a v successful baked paella-ish thing lately - that could be good.
Big cheese fondue with lots of pickie things.
Big pan of soup with good bread, cheese etc.
Instead of cottage pie you could do a hotpot type thing with sliced potatoes and cheese on top - it's less 'gloopy' looking on the plate!
Veggie sausage casserole.

Ooh cheese fondue is an amazing idea for a skiing holiday. I want to go skiing now just to have one...

Raclette. Perfect as you can hire the machine where you buy the cheese. Your apartment might even have one.

Are you flying or driving ?
If driving then you could 'cheat' and go to your nearest 'Cook' and buy one of their frozen prepared meals ( they come in 2 person, 4 person or even singles). Should still be frozen by the time you arrive in resort and you can offer to be the cook for the first night !

Delia Smith also has a good veggie cook book but defo agree with Hugh FW. It's ace. Comforting foods that I would cook:
Chunky soups
Bean stew and Dumplings
Pasta bakes in the oven
Risotto
Shepardess pie (with lentils instead of meat)
Ah and Foundue- that is a great suggestion!

Roast veg and feta wraps
Cheese and red lentil rissolves (basically cooked red lentils and cheese formed into patties and fried - dip in egg/crumbs first if you can - or just crumbs if mixture is a bit wet)
Dragon pie (aduki beans/carrot/onion/bulgar wheat (or similar) cook with stock & tomato puree, top with potato/sweet potato

Will you really want a big hearty meal in the evenings?

Just asking, because we never do! After lunch, either in the apartment or a restaurant, we wouldn't usually have anything more filling than soup, and some cake or fruit, in the evening.

Veg and bean and lentil chilli with jacket potatoes or rice:

Fry off chopped onion and garlic
Add mushrooms and courgettes and fry for a few minutes
Add can of kidney beans & baked beans & chopped tomatoes & lentils & sweetcorn, squidge of tomatoe purée, chilli powder to taste and a bit of water if need be, cook all together gently to heat it all through, chuck on top of large jacket potato and add grated cheese or serve on top of mountain of rice.

Extremely filling and extremely yummy. You can add anh veg you fancy really that you thing will work! The mushrooms make it nice and 'meaty' though! I'm making a big pot of this tomorrow morning for a couple of our evening meals next week!

Thank you everyone for all of these great suggestions.

And yes - we are all STARVING and exhausted after a day of skiing! We all wolf down huge amounts of food and are fast asleep by 10 o'clock.

Fahitas always go down well when we're skiing.

BTW I agree with ecuse - we all eat like pigs after skiing all day. If I served my family soup they would look at me like I was some sort of mad woman.
