In laws comin need an impressive. (but easy) recipe

There'll be 10 of us so a one pot recipe would be great. Eg Something I could make the day before would be great too. SIL1 (deliia contender) has made Curry the last time we met, I can't do anything with mince as I've seem to do that each time whether it be a lasagne, chilli or whatever... Ideas pleeeaaase

bangers and mash done well, and done simply, always goes down very well. Use posh sausages.

I find beef bourgignon (sp?) always a crowd pleaser. A good recipe for this is in Delia's Complete Cookery Course. Supplement with roasted butternut squash and little puff pastry squares (obv puff pastry ready made).

Chicken in Red Pesto Sauce (recipe I have serves 4, but just double/triple quantities) - very quick (takes no more than 25 minutes in total), v tasty, foolproof, can serve with rice/mash/couscous/pasta and salad or a green vegetable:

4 chicken breasts (skinless)
200ml chicken stock
3 tablespoons red pesto
3 tablespoons tomato puree
150ml Greek yoghurt (ie one small pot)
Olive oil

Heat some oil, fry the chicken breasts until browned (might need to do this in batches if cooking for 10). Meanwhile mix the stock, tomato puree and red pesto together, pour into the pan. Cover and simmer for 20 minutes. Stir in the yoghurt and heat through gently without boiling. Serve.

Chicken fricasse - chicken breasts, chicken soup, frozen peas, tin of sweetcorn, clove of garlic and rice.
Or
Beef stew - beef cubed, pre cut bag of carrot and swede, gravy with mash potato.

Kale and chick pea curry
Jacket tats with smoked haddock, mustard and cream
Roast chicken pieces with rosemary and garlic, roasted new tats and veg
Chicken and avocado ciabatta burgers with wedges

I'll post the recipe if any sound any good!

You need Chicken Marbella. Don't start quartering chickens, though, that's just heroic. It works perfectly well with chicken breasts or other portions.

This was phenomenally popular in the US when the Silver Palate published their cookbook in the eighties, about due for a revival. Marinade the day before, bake on the day. Very Simple. Delicious. (Because it contains sugar!)

Or this Chicken with preserved lemons. You can get preserved lemons in big sainsbury's, waitrose or shops selling north african stuff.

A maroccan style casserole? Lamb or chicken, chickpeas, sweet potatoes, driet apricots or sultanas (optional) and cous cous. Served with flat bread, mint yoghurt and salad.

Three suggestions:

  1. a sausage and cheese risotto, served in individual portions wrapped in foil
  2. a roasted chicken stuffed with a mix of cooked rice, dates, pistachios etc
  3. a chilli with all the bits (guacamole, soured cream, salsa, tortillas, beers etc)

Roast pork belly (there are very good recipes on the bbc good food site, not sure how to link) - quite cheap and unbelievably delicious. Last time I served it with red cabbage with apples and chestnuts and a celeriac/potato mash, very cheap as all these things are in season at the moment but tasted very luxurious/expensive! You could cook the vegetables the day before and just reheat while the pork belly is in the oven, who wants to be standing in the kitchen for hours while you have company anyway?

Jamie Oliver's 5 hour lamb is one of my staples when we've got guests.

Or chilli with all the accompaniments is always a crowd pleaser.

Delia has a good recipe in one of her books for a chicken casserole with apricots which is very nice and you can make ahead and then serve with huge piles of fluffy mash and some leafy greens.

Really easy one-roasting-tin recipe for loads and loads of people.

  • 3 packs chicken thighs
  • 1.5kg new potatoes, halved
  • 8 carrots, cut into chunks roughly the same size as the potato pieces
  • 2 packs of bacon (20ish rashers in total)
  • 4/5 red onions, each cut into eighths
  • thyme and sage


  1. Dry fry the bacon till it's browned, then put i with the veg and herbs in a large roasting dish, and season. Put is in a 200C oven for 15mins
  2. Meanwhile, brown the chicken pieces for a couple of mins on each side, and then add to the veg after the first 15 mins are over.
  3. Cook for another 30-35mins and serve!


If you want to make a gravy/sauce to go with it, then add a 3/4 knobs of butter to the dish with about 5mins cooking to go. When you've removed the chicken and veg, whisk 4tbsp of red wine vinegar and 2 tbsl wholegrain mustard into the juices left in the roasting pan and use that as gravy.

It's very, extremely easy!

This Chicken and Polenta recipe is great.
It tastes wonderful, can be served with whatever veggies/salad/sides you enjoy.
There is less than no preparation, you just put all the ingredients into one pot and then roast it. Or two pots if you have more people.
