Parsnip recipes please must have got about 15 for a £1.00 at the market!!!

any parnsip recipes would be much appreciate especially soup.

Delia Smith's roast parsnips with parmesan are great.

potato parsnip and carrot soup

1 onion
2 parsnips
2 carrots
2 large potatoes

Peel and dice the onion. Fry gently in oil or butter until soft.
Meanwhile peel and dice the other veg. Add to onion when cooked and fry for a couple of minutes. Add vegetable stock to cover and a little bit more. Bring to the boil and then simmer for 30 minutes.
Blend to a smooth soup.

parsnip and apple soup- same as yorkiegirls, but substitue carrots for apples.

I love it boiled with swede and carrot (add the parsnip last as cooks quickly) then roughly mashed with lots of pepper.

I freeze batches of this too. Great with meat although my children like it as it is with cheese grated into it.

PARSNIP BALLS
Mash boiled parsnips with a drop of cream
add a pinch of nutmeg and season with salt and pepper.
Roll into small balls and coat in bread crumbs or matzo meal or any other coating of your choice
Bake in the oven until golden brown.
These are fab as an alternative to roast parsnips especially for Xmas dinner and they can cooked from frozen.

I roast them with just a little bit of olive oil and a pinch of salt. Sometime I add a little lemon juice too, but this is optional. My kids are fanatical about them. In fact my ds reminds me at least once a week to buy parsnips at the supermarket.
