What to do with cheese sauce

I made too much cheese sauce last night so want to re-use it tonight but with something other than pasta.

I have lots of potatoes and was going to make wedges out of them.

Any suggestions as to what i could do with the sauce to turn it into something edible?

2 of the children eating it are vegetarian.

there was a lovely recipe last night on the hugh fernley whittingstalls programme last night. Had ham in it but you could leave it out if you like. Was spinach in a cheese sauce wrapped in pancakes and baked. x

You could freeze it for another time. Cheese sauce freezes really well!

oh just the bit about the children ^ Grin

Par boil some potatos, fry some onions and garlic then chuck it all in a dish with the cheese sauce and ovenbake. Serve with green veg or baked beans?

Brocolli cheese
Caulliflower cheese
sliced (chunkily) potatos, onions and other veg in cheese - sometimes nice with cubes of bread in it
Add mustard and cayenne to the sauce and drizzle over nearly cooked potato wedges until it bubbles (we do this with leftover rarebit)
leeks in cheese sauce

Ooh, thanks for the replies!

I love all the suggestions but I have a funny feeling that the two vege children will pull faces so might just put the sauce in the freezer and serve it up another day for ds and I. They like to have things separate...ie veg, carb, protein not mixed together. I suppose I could do a veg bake type dish then serve extra veg and edges.

Yay! A successful tea...I mixed carrots, baby corn and asparagus (was the only green veg I had) in the cheese sauce with breadcrumbs and cheese on top with potato wedges and everyone ate everything and it's all gone! except for a pile of discarded asparagus Grin

I have about 8 different children to feed over various evenings of the week and they're all pretty fussy. I rarely cook something that everyone likes and it's so frustrating when I've spent time and effort trying to make them something nice so when it does happen I get ridiculously excited BlushGrin

Poached soft on toast with sauce on top with a side of sauté potatoes an greens. Good luck
